Every year, the Best in the West Rib Cook-Off brings pitmasters from all over the country and the world right here to the Reno area.
Jon Biglak, the pitmaster for Just North of Memphis BBQ, told us his family was the catalyst for him getting into BBQ competitions.
When he was a kid, he would visit his aunt and uncle for family vacations and holidays, and they're the ones who introduced him to the BBQ world.
His uncle was also inducted into the BBQ Hall of Fame in Kansas City.
"He's one of the guys who got the whole sport of BBQ started in the 70's and 80's, and I just loved it, so I got into it with him,"Â said Biglak.
Jon even has a tattoo of a flying pig that's tied to his family's BBQ history.
"My uncle competed in the world championships in Memphis for 33 straight years, the longest consecutive-running competitor in the world championships ever. In the 32nd year, a reporter just like yourself went to his booth and said, 'Jon, how long are you going to keep doing this?' and his answer was 'until pigs fly.'"
The next year his uncle competed, a T-shirt was made that had a pig with wings on the front, which also was the year his uncle last competed. Jon decided to make this image of the flying pig last forever.
"I'm going to be 62 in January. It took me 61 years to figure out what kind of tattoo I wanted, and I went, "You know what? I'm going to get that flying pig on my arm; it's an original piece of art nobody else has it, just me."
Now Jon's kids and their spouses work closely with him.
Biglak says, "One of my favorite sayings is a family that plays together stays together."
He goes on to share with us the five elements his uncle says make BBQ great.
"Most people know the typical four tastes, tenderness, appearance, and these things, but the fifth element is the quintessential element, and that means you want it to be unforgettable, so we want people who come to North of Memphis BBQ to never forget your experience."
This is their 14th year competing, and they've won best sauce for the last two of three years.
Jon says they're best known for their Memphis dry rub style ribs...
