Washoe County has temporarily closed The Brewer's Cabinet after the brewery failed a health inspection with multiple critical and non-critical violations. 

According to the Northern Nevada Public Health's website, The Brewer's Cabinet at 475 S. Arlington Ave, failed a routine inspection on Monday, September 23, and as a result was temporarily closed pending the violations being corrected. 

According to the website, the violations which caused the closure are as follows:

Critical Violations: 

  • 25a. Poisonous or toxic chemicals properly identified, stored, and used
    • *This is a repeat violation for second consecutive inspection* Observed several unlabeled spray bottles with liquid in facility. Ensure all bottles for any liquids, including water, are labeled properly to prevent misuse of any liquids. Instructed operator to label bottles.
  • 28. Warewashing equipment installed, maintained, and used; proper sanitization
    • Dishwasher in the bar area observed dispensing no chlorine at time of inspection. Dishwasher must dispense chlorine sanitizer at a concentration of 50-100ppm for proper sanitization of equipment. Bar area has no other method of washing dishes. Permit suspended. Facility must not operate until inspector returns for reinspection and permit is reinstated.
  • 20. Proper cold holding temperatures
    • Observed container of ranch in reach in cooler at 45F. All cold-holding temperature controlled for safety (TCS) foods must be maintained at or below 41F to prevent bacterial growth and ensure food safety. Ranch discarded. Other containers of ranch in cooler measured at 43F. Instructed operator to move those ranches to a different cooler (41F +/- 2F due to stem thermometer margin of error) and to not use cooler for TCS food storage until repaired and maintaining 41F and below throughout cooler.

Non-Critical Violations: 

  • 1. Demonstration of Knowledge/Active Managerial Control
    • Observed a lack of managerial control due to several critical violations. Managers must retrain all staff on food safety practice to ensure critical violations stay corrected and won't be repeated in the future.
  • 35. Thermometers provided and accurate
    • Observed broken thermometer in reach in cooler. Ensure all cold-holding units have working internal thermometers to properly monitor temperatures.
  • 37. Contamination prevented during food preparation, storage and display
    • Observed personal items stored in reach in cooler next to service food. Employee food and drinks must be stored away and in a designated area to avoid comingling with service food. Discussed with operator on getting a labeled bin to hold employee items inside cooler.

We are deeply concerned by the recent findings in the health code report regarding The Brewers Cabinet. The safety and well-being of our customers have always been our top priority, evidenced by our continuous investment in preventative pest control measures throughout our years in operation.

We want to clarify that there was no infestation or contamination in our kitchen or food products. These allegations are being appealed and believed to be based on unfounded rumors and lack of substantiation.

We have implemented all necessary staffing, management replacement, and procedure changes to ensure the highest cleanliness and food safety standards. We appreciate the community's patience and understanding as we address these matters.

We stand by our track record of being a community steward through commerce and service, and we will continue prioritizing the health and safety of our customers and staff. This is not just a commitment, but a core value of our business. While this situation is regrettable, we have taken all essential steps to comply with city and state health code regulations. We have always worked with the City and Health officials to comply without previous violations.
