From Kentucky barbecue to local grilling, the Nugget Best in the West Rib Cook-off in Sparks features delicious ribs from across the country.
Ryan Hayes is the pitmaster for Git-R-Smoked from Lexington, Kentucky. He says having a booth at the festival brings in a lot of business.
"Getting the exposure, getting the name out there, you know," Hayes says. "The repeat years to build your customer base. Just keep going. It'll get bigger and bigger each year."
Hayes says his ribs are set apart by two things. One, his team brings in fresh ribs every day. Two, his ribs have a unique blend of flavors.
"We do a special blend on a sweet, tangy barbecue sauce, and then, you have our robust rub," he says. "Everything kind of blends together."

Pitmaster Joshua Lee Polon says he cooks his ribs on a Cen-Tex offset smoker. It gives him more control over the process.
"It's all wood-fired," Polon says. "All your heat is controlled by how much wood you put on the smoker, and how you control your different dampeners."
Polon has been in the rib business for 26 years and started this business in 20-20.
Since the Rib Cook Off looks for national competitors, he says there's more pressure on him as a local cooker.
"In order for me to get in here," he says, "Â I have to really be the best of the best to come and compete with national competitors who do this every day."
As far as the flavor, Polon says his ribs are the "essence of the tree."
Joshua Lees Pit BBQ -- and Git-R-Smoked -- are just a few of the great vendors out at the Rib Cook Off.
