Northern Nevada Public Health will host a Special Processes Fair workshop to help restaurant operators better understand regulations and procedures for performing specialized food handling practices.
The workshop will take place on Monday, June 23, from 9 to 11 a.m. at the Washoe County Administrative Complex, located ast 1001 E Ninth Street in Reno, Building B, Conference Rooms A and B.
The event will provide guidance on the requirements for conducting various special food processes and how to get them approved.
Topics of the workshop will include outdoor barbecuing, accommodating dogs and their owners on patios, and extending shelf life using reduced oxygen packaging or fermentation.
At the Special Processes Fair, NNPH will review the key components necessary for each type of special process.
According to NNPH, “The event will cover all the basics and give a roadmap to getting your special process approved.”
Additional materials are available on the NNPH website, including application packets and Hazard Analysis and Critical Control Points (HACCP) plans for acidification, canning, cook-chill, dehydration, fermentation, freeze-drying, packaging juices, reduced oxygen packaging, smoking or curing, sprouting, and acidifying sushi rice.
Operational plans are also available for processes such as dogs on patios, barbecues, catering, non-continuous cooking, pool decks, and outdoor food establishments.
